Yes, they are great for New Year's (good luck and all that), but they are also a staple of the Southern diet. This recipe is from Cyprus and is a nice twist on a familiar dish. Bon appetit, ya'll.
Black Eyed Pea Salad
1 lb fresh black eyed peas
1/2 tsp olive oil
2 medium onions, chopped
1/2 cup fresh parsley, chopped
juice of 1/2 lemon
salt and pepper to taste
1. Wash black eyed peas well. Place in a small saucepan with enough water to cover. Bring to a boil over medium heat.
2. Remove the saucepan from the stove and drain off the water. Add enough water to cover. Bring to a boil over medium heat again.
3. Drain water from black eyed peas. In a medium sized bowl, mix black eyed peas with remaining ingredients.
4. Makes 6, 2 point servings. Serve warm or cold.
