Roasted Cauliflower - 2 points

Adapted from Superfoods for Women.


Roasted Cauliflower
1 large head cauliflower, separated into florets
1 tbsp sesame oil
2 cloves garlic, minced
salt and pepper to taste

1. In a small bowl, mix garlic and sesame oil.
2. Place cauliflower in a cake pan or stone. Pour oil over cauliflower and toss to coat.
3. Roast for 15 minutes in a 375F oven, turning every 5 minutes to ensure all sides are browned. Before serving, salt and pepper to taste.
4. Yields 4, 2 point servings
