This is probably one of the easiest recipes in the world, but one should never underestimate the power of simplicity! My mom started making zucchini this way when I was in high school, and it is now one of my only non-carb comfort foods.
Fried Zucchini with Onions
1 large onion, sliced
1 1/5 lb zucchini, sliced
3 cloves garlic, minced
- Heat a large skillet over medium heat. Spray with non-stick cooking spray or kitchen spritzer. Add onions and garlic and sauté 3 minutes.
- Add zucchini. Cook, stirring frequently, for 20 minutes or until zucchini is soft.
- Yields 4, 1 point servings.
