Pork Chop Dinner - 7 points

Today started out with a 4 point omelet - 3 egg whites, 1 slice of low fat ham, 1 slice of mozzarella cheese, topped with fat free salsa. Yum.  Since I am still battling my cold, it was crock pot dinner again tonight. I haven't been to the store in a long time and didn't want to get out today (another snow day), so I looked around for something to throw in the crock pot and hoped for the best. It was fantastic - the veggies reminded me of Southern style squash casserole but without the butter and sugar that usually add hefty calories to that dish.

Pork Chop Dinner
4, 6 oz pork chops
1 can Campbell's Healthy Request Cream of Celery soup
1 apple, diced
3 large zucchini, chopped
1 tbsp honey
2 tbsp Dijon mustard
1/8 tsp peppercorns
1 cube chicken bouillon

1. Mix soup with honey, mustard, peppercorns, and bouillon in a small bowl.
2. Place pork chops in the bottom of a slow cooker. Top with soup mixture, followed by apple and zucchini.
3. Cook on high for 5-7 hours, or until pork is very tender.
4. Yields 4, 7 point servings

I was too hungry to get a picture that would really do this justice, so this will have to do.

It is back to work tomorrow, so I have put some rice pudding (low fat style) in the crock pot for a motivational breakfast. Here's hoping it turns out to be delicious!

  1. Wow, these meals look so great! Thanks for putting them up there. I have felt creatively limited when in comes to cooking by the WW system since I started, so I am looking forward to trying some of these recipes out!
